2023年のJava Finchはこれまでラガー酵母を使ってきましたが昔から好きなWhite Labs社のWLP 001が乾燥酵母になったと聞いて早速Java Finchでも試してみたくなり、Flycatcherに続いてドライのCalifornia Ale酵母での醸造となりました。 酵母投入時の温度はエールにしてはかなり低めにしましたが発酵3日目ぐらいから高めになって普段あんまりやらない事やった割に良いところに落ち着いてくれたのはこの酵母が優秀だからだと思ってます。 ちょっと暗めの湿った草っ...(Read More)
