HISTORY 2021.12 仕込み。 2022.2 木樽(コニャック樽)へ移送。ブレタノマイセス(野生酵母)を投入。 2023.6 いちごを浸漬。290L容積の樽に、約38kgのいちごを投入。 2023.12 ボトリング。その後瓶内発酵･熟成 ※樽熟成(Barrel Aging)で使用した木樽は、フランスの蒸留所で使用されていたもの。 TASTING NOTES 深い茶色の外観。ほんのりと赤みががっている。まず感じる香りは、ベリー系の柔らかな、ジャムを思わせるいちごの香り。口に含む...(Read More)
