I really like how soft this sake is textually! This sake starts out somewhat intense at fist, but mellows quickly with soft fruits, florals and caramelised sugar being the main stay aromas and flavours.
Despite the age, there isn't very strong umami or astringent notes in this sake. I really particularly like that floral aroma of chrysanthemum tea in this sake - which to me, evokes a sense of nostalgia and refreshing -ness both at the same time.
