This is a surprise! I don't always like the sharp intense flavour from juniper, but this is a gentle slide into a sunny fresh field of long grass swaying in the wind with a lingering white floral scent. Green notes, a hint of bitterness somewhere in the middle, kind of zesty somewhere, light sweetness from the honey, the sparkle binds all of the flavours together perfectly.
