First off, I did not realise that sake was only polished to 90% because it was so impressively clean! Drinking it, it’s a lovely blend of rustic rice notes balanced with crisp dryness and some familiar fruitiness.
It's very drinkable, but with a pop of unusual lactic sourness that gives it real personality. And yes, it's exactly as promised: a taste of the raw, unadulterated essence of the rice itself.
Even then, it's remarkably versatile and could really pair with a range of cuisine from Japa...
