This was incredibly intriguing and perhaps the most interesting mead I've had thus far. As there's no adjuncts being used here, it entirely focuses on expressing the inherent flavours of the unique Bloodwood Honey. And so this expression is as much the uniqueness of the honey along with the skill of the maker in realising and showcasing those flavours - don't they say an omelette is the true test of a French chef for those very reasons?
